John Lucey

Dr. John Lucey is a Professor of Food Science at University of Wisconsin-Madison and the Director of the Wisconsin Center for Dairy Research (CDR). John has a PhD in Food Science and research experience in Ireland, the Netherlands and New Zealand prior to joining the UW-Madison faculty in 1999. The CDR has over 50 staff and in 2023 opened its new $72M R&D facility at Babcock Hall. He has published over 160 peer-reviewed papers and 32 book chapters. A highly cited researcher, he is listed in the Stanford/Elsevier list of the world’s top 2% of cited researchers. Main interests include dairy chemistry and dairy processing, fermented dairy products, milk proteins, and value-added utilization of dairy coproducts. He teaches a wide range of industry training courses. He is PI on the Dairy Business Innovation Alliance (DBIA), a regional USDA center supporting dairy innovation/entrepreneurship. He is a Fellow of American Dairy Science Association.
